Angel Delight Strawberry Cheesecake
Ingredients
1 packet Angel Delight Strawberry mix
• 300ml cold milk
• 150g digestive biscuits
• 75g melted butter
• 150g cream cheese
• 6–8 fresh strawberries
• 2 tbsp icing sugar (optional)
• Strawberry compote or crushed strawberries for the topping

Method
Crush the digestive biscuits into fine crumbs and mix with the melted butter until well combined.
• Spoon the biscuit mixture into the bottom of small glass dessert jars or cups and press down gently to form a compact base. Place in the fridge to chill while preparing the filling.
• In a bowl, whisk the Angel Delight Strawberry mix with the cold milk for around 30 seconds until thick and creamy.
• Fold the cream cheese into the mixture until smooth to create a richer cheesecake-style filling.
• Spoon or pipe the strawberry mixture over the chilled biscuit base to create the second layer.
• Top with a layer of crushed strawberries or strawberry compote.
• Finish with fresh strawberry slices on top and chill for 30–60 minutes before serving.
