Herb-Crusted Rack of Lamb with Dijon & Parsley Crust

Ingredients

2 x 6-bone racks of lamb (French-trimmed)

2 tbsp Dijon mustard

1 tbsp Country Range parsley

1 tbsp breadcrumbs

1 tbsp Country Range olive oil

Salt & pepper

Method

1. Preheat oven to 200°C.

2. Season lamb, sear to brown all sides.

3. Mix mustard, parsley, breadcrumbs and oil.

4. Spread crust over fat side and roast for 20–25 mins for medium.

5. Rest, slice into chops and serve with fondant potatoes.
