Chargrilled Bone-in Lamb Loin with Chimichurri

Ingredients

2 x bone-in lamb loins

1 tbsp Country Range BBQ seasoning

1 tbsp Country Range olive oil

For chimichurri: parsley, garlic, red wine vinegar, oil

Method

1. Rub lamb with oil and seasoning.

2. Grill over high heat 3–4 mins per side for medium.

3. Rest and spoon over fresh chimichurri.

4. Serve with charred vegetables or roasted peppers.
