Osso Bucco with Lemon Gremolata

Ingredients

4 cross-cut beef shanks

1 onion

1 carrot

1 celery stalk

2 garlic cloves

300ml beef stock

200ml white wine

Gremolata: lemon zest, parsley, garlic

Method

1. Sear meat, remove.

2. Sauté veg, deglaze with wine.

3. Add stock and beef, braise at 160°C for 2.5 hrs.

4. Serve with gremolata and polenta.
