Seared Lamb Tenderloin with Pea Purée

Ingredients

2 lamb tenderloins

1 tbsp Country Range olive oil

200g peas

1 tbsp crème fraîche

Mint leaves

Salt & pepper

Method

1. Season and sear tenderloin in oil until golden all over.

2. Transfer to oven at 180°C for 6–8 mins.

3. Blend peas, mint, crème fraîche into purée.

4. Rest meat, slice and serve on pea purée.
