Slow Braised Lamb Flap with Tomato & Garlic

Ingredients

4 lamb kidneys, halved and cored

1 tsp English mustard

1 tsp Worcestershire sauce

1 tbsp butter

Salt & pepper

Sourdough toast

Method

1. Sear lamb, remove.

2. Cook garlic and onion, add tomatoes.

3. Return flap, cover and braise at 150°C for 3 hrs.

4. Slice and serve in sauce.
