100g dried apricots, chopped
1 onion, finely diced
1 tbsp Country Range sage & onion stuffing mix
1 egg, beaten
Salt & black pepper
1. Mix apricots, onion, stuffing mix, and egg into a firm stuffing.
2. Unroll lamb, spread with stuffing, roll and tie securely.
3. Season and roast at 180°C for 90 mins.
4. Rest 15 mins, slice and serve with pan juices.
