Glazed Lamb Henry with Redcurrant & Mint

Ingredients

2 x Lamb Henry portions

2 tbsp Country Range mint sauce

1 tbsp redcurrant jelly

200ml lamb stock

Salt & pepper

Method

1. Preheat oven to 180°C.

2. Place lamb in roasting tray.

3. Mix mint sauce, redcurrant jelly, and stock.

4. Pour over lamb, cover and cook for 90 mins.

5. Uncover and glaze for final 20 mins.

6. Serve with root veg or mash.
