1. Sear lamb sirloins and set aside.
2. In same pan, caramelise shallots in oil.
3. Add thyme and lamb stock, reduce to thick jus.
4. Finish sirloin in oven at 190°C for 6–8 mins.
5. Slice and serve with jus and shallots.
