Slow-Braised Beef Cheeks with Root Vegetables

Ingredients

2 x 200g beef cheeks

1 tbsp Country Range flour

1 tbsp oil

1 onion, diced

2 carrots, sliced

200ml red wine

300ml beef stock

1 bay leaf

Method

1. Dust beef cheeks in seasoned flour and sear until browned.

2. Remove and sauté onion, carrot.

3. Deglaze with wine, add stock and bay leaf.

4. Return cheeks, cover and braise at 160°C for 3 hours.
