Diced Lamb Leg Curry with Spinach & Tomato

Ingredients

800g diced lamb leg

2 tbsp curry paste

1 onion, chopped

1 tin tomatoes

2 handfuls spinach

Salt

Method

1. Brown lamb, add onion and curry paste.

2. Stir in tomatoes and simmer 1.5 hrs.

3. Add spinach before serving with rice.
